Fakat k\u0131zartma i\u015fleminde bu doymam\u0131\u015f ya\u011flar\u0131n y\u00fcksek s\u0131cakl\u0131k etkisi alt\u0131nda kimyasal reaksiyonlara girerek aldehit ortaya \u00e7\u0131kard\u0131\u011f\u0131 belirtiliyor. \u00c7i\u011f t\u00fcketimi esnas\u0131nda yararl\u0131 olan ya\u011f\u0131n \u00f6zelli\u011fi k\u0131zartma i\u015fleminde tersine d\u00f6nerek sa\u011fl\u0131\u011f\u0131 olumsuz etkiler hale geliyor.<\/p>\n<p>Aldehit bile\u015fiklerinin kanser, kalp hastal\u0131\u011f\u0131 ve bunama gibi bir\u00e7ok hastal\u0131\u011fa sebep oldu\u011fu biliniyor.<\/p>\n<p>Ara\u015ft\u0131rma kapsam\u0131nda bitkisel ya\u011flar ile k\u0131zart\u0131lan patates ve bal\u0131k gibi yemeklerde \u00f6l\u00e7\u00fclen kanserojen aldehit miktar\u0131 D\u00fcnya Sa\u011fl\u0131k \u00d6rg\u00fct\u00fc\u2019n\u00fcn belirledi\u011fi olmas\u0131 gereken en y\u00fcksek miktar\u0131n 100 ile 200 kat\u0131 civar\u0131nda \u00e7\u0131kt\u0131\u011f\u0131 belirlendi.<\/p>\n<p>Ara\u015ft\u0131rma kapsam\u0131nda k\u0131zartma i\u015flemi sonucu en d\u00fc\u015f\u00fck aldehit miktar\u0131 Hindistan cevizi ya\u011f\u0131 ile yap\u0131lan yemeklerde oldu\u011fu tespit edildi.<\/p>\n<p>Tereya\u011f\u0131 kat\u0131 ve hayvansal ya\u011f olarak sa\u011fl\u0131\u011fa zararl\u0131 oldu\u011fu d\u00fc\u015f\u00fcn\u00fclse de k\u0131zartma i\u015flemi sonucunda en az aldehit maddesi olu\u015fan ikinci ya\u011f oldu\u011fu g\u00f6zlemlendi.<\/p>\n<p>Zeytinya\u011f\u0131n\u0131n ise tereya\u011f\u0131 ve hindistan cevizi ya\u011f\u0131na g\u00f6re \u00e7ok daha fazla aldehit \u00fcretti\u011fi fakat sa\u011fl\u0131kl\u0131 oldu\u011fu d\u00fc\u015f\u00fcn\u00fclen m\u0131s\u0131r ve ay\u00e7i\u00e7e\u011fi ya\u011f\u0131na g\u00f6re \u00e7ok
